ok i'm not noob @ quake kind games (played q2 ~4-5 years, and now playing warsow) i wanna try to play qw, but i actualy dont understand what i must download, do i need quake1(i think its free now?) and EZquake for example, and thats it?or do i need something else? i actualy googled it many times but still no guide "how to..." :/ some help will be appreciated

Though ezquake probably ur best bet (just rtfm) all u need is the shareware q1 to get started though picking up a copy of full quake shouldn't be too hard, probably a torrent
I'm pretty sure ezquake comes with frogbot which is the easiest way to start playing without getting humped too bad also good for configuring qw and testing settings.
Start with dm4/dm6 thats where all qw players start

so whats the difference betwene them?just graphics or something elso, and also can i play for example with ez quake also with def's quake on the same server ?

well, configs, extras and stuff clients don't differ so much with the same config being used..

ezQuake, Fuhquake, mqwcl, zQuake etc

Quake packages that may include one or more clients (from the list above) and other Quake files
eQuake, fQuake (legal, based on shareware Quake), Def's Quake setup etc

You can have many clients installed at the same time. eQuake/fQuake might come with nice installers where you can choose from some options on what clients etc to install. If you use Def's quake then you "only" get ezQuake (it's the most up to date client anyway).

Hey! I just started playin QW too. eQuake works great. We should go play some time. I have some experience from cpma and warsow. You use McNys as your QW nick? Well.. Gimme a call if you wanna play with an other noob! 8)
