Japan is a big consumer of tea, it is normal to have your own ways to prepare tea. When we speak of tea in the Japanese context means green tea, black tea is almost nonexistent in Japan.

Of course, there are several kinds of green tea in Japan. Because of soil, climate and the cultivation and production, Japanese green tea is slightly different from the Chinese taste and results in a slightly different preparation than his Chinese counterpart. To avoid confusion, the method of Japanese green tea is not and does not refer to the famous tea ceremony, which will discuss briefly in the last part of this section. 1. Boil Water

Boil water. In case you do not already know, water quality counts for a tea you need a good quality water.

2. Fill teapot with boiling water

Pour water into the kettle and allow up to one minute. After casting, the water will reach 85-90 degrees Celsius and will warm teapot. Tea leaves should not be made yet.

3. Pour into cups

As I mentioned, you need an extra cup. If you prepare a cup of tea, you need two, if prepared two, you need three, etc.. Put the cups in place and pour water into cups at a time other than the last. Drain remaining water from the kettle. At this point you have just the right amount of water you need.

4. Put tea leaves in teapot

Using the same leaves, you can do three, four successive infusions. Using a spoon, add the tea kettle. If you have other instructions, put a teaspoon to 2 cups. Some teas, such as gyokuro need a larger quantity and a lower temperature.

5. Cool cups water

Pour water from one cup to another, thus the temperature down. If you have three cups (two water and one without), pour water from a cup in the second third, and first in the second. In this way water reaches 75-80 degrees, perfect for Sencha, and for most green teas. Usually, it's as noble assortment of tea, the more it's low temperature brew. To obtain a low temperature, water will pour from one cup to another until you get the right temperature. At first, a thermometer would be very helpful, but ultimately you can appreciate a single temperature. As a benchmark, with each casting temperature decreases by 10-15 degrees.

6. Pour water into a teapot cup

7. Wait

Wait 30 seconds and 2 minutes. For teas that require a lower temperature, will have to wait longer.

In general, you can experience here. Lost only when the tea is bitter, meaning that tea was the infused too much. Many people prefer to leave it to infuse for only 30 seconds, but many leave 2 minutes.

8. Pour back into cup

Pour tea into cups until the last drop. Enjoy and aroma, admire the color and try to remember these things next time you cook. Remember, tea should not be bitter.
